Honey & the Hive Local Honeycomb and Comb Honey
Every summer is spent in anticipation for the return of raw, local, fresh honeycomb! Packed full of this season's honey, a raw honeycomb provides a different flavor experience than honey on its own. The taste of wax and residual pollens impart a wild and aromatic quality to the fresh honey. You can either eat the wax (yes, beeswax is edible!) or spit out the leftover wad of wax once you're done chewing.
Another option for those wanting a honeycomb experience is comb honey, sometimes called chunk honey. A big piece of raw honeycomb is placed in a jar with more honey, adding more flavor and complexity to the honey over time. And you still get to eat the honeycomb!
For 2025: We have both honeycomb and comb honey available in very limited quantities, and will also be saving some for the winter holidays. It's been a pretty decent honey season, but recovering from Hurricane Helene has taken the bulk of our bees' energy as our bigger apiary had to be restarted from scratch! We hope that next year we will have an abundant amount of honeycomb available.
